Pickled Onions

1kg small pickling onions or shallots, peeled
30g salt
1 tsp dried chilli flakes/ chinese onions
1lt white vinegar
6 juice lemon

Optional:
180g granulated sugar Sugar, is to use it when it is strong-tasting vegetables like turnips and others.

Put the onions in a large bowl with the salt and mix together. Cover and leave overnight. Rinse well in cold water and allow to dry as much as possible.
Pack the onions into sterilised jars. Put the white vinegar, chilli flakes and lemon juice.
2 nights is good so be ready!
Pour the vinegar over the onions and seal the jars.
